This is a pretty fool proof recipe for an ultra-tender pork belly with lovely spicing and depth of flavour. You could use it as a roast or for a multitude of other things. In the bars we wrap and slow cook this for 14 hours, press it and then cut it again to sear and caramelise on the griddle. But this is an adapted recipe perfect for family/group dining at home.
